Located in a valley of the Vosges massif, the ancient principality of Salm is still home to three abbeys today. Since 2017, the Opercule brewery has been producing organic and artisanal beers. In addition to their activity as brewers, the artisans are beekeepers and use honey, a treasure from our mountains, to referment their beers in the bottle. Honey helps carbonate the beer while softening its bitterness. Although the sugar disappears, it gives way to subtle honey fragrances with a floral aftertaste.
